Everything in the pot is bland on purpose. Daikon, egg and potato earn their place by holding stock, so the dashi is the only flavour and it reaches the middle of each one.

Tokyo

Pandan aroma is fat-soluble, so coconut milk strips it out of the leaf where water barely touches it.

Malaysia

Dry seasoning you eat by the spoonful. Toast the meal in fat until it is sandy and it will take up the pot liquor of whatever it sits beside without collapsing into paste.

Yolk, sugar and coconut with nothing to dilute them. No milk and no flour anywhere in it, so every bit of the set has to come out of the yolk.

Northeast Brazil

Enough pectin in the fruit to set hard without help, so the paste gets cut in slabs. That is why it arrives with a knife and a cheese rather than a spoon.

Cassava meal takes up the oil the pounded peanuts give off. That is the entire trick behind a sweet that holds together dry, with no cooking and no fat added.

The berry is not sweet. Where it grows it is eaten salted, with toasted meal for grip, beside grilled fish — everything that turns it into a dessert is added a long way downriver.

Pará

Damp starch sifted onto a dry pan fuses into a flatbread with no liquid, no fat and no flour in it. Heat is doing the job a binder does everywhere else.

Northeast Brazil

The dough is mixed with the broth the chicken was poached in, so the wrapper already tastes of what is inside it. A neutral pastry is a pastry you eat around.

A savoury custard set with stock where every other custard uses cream. No fat anywhere in it, so the texture has to come from the egg alone and the flavour from the dashi alone.

Iced water, chopsticks, a few seconds of mixing, lumps left in on purpose. The whole crust depends on the batter being underworked and still cold when it meets the oil.

The knife is the recipe. Ten millimetres for firm flesh, two for anything you can see through — thickness is the only seasoning a raw slice ever gets.

Sugar, salt and alcohol reduced together become lacquer. The gloss is the sugar and the name is the gloss, so stop reducing early and there is no dish left to serve.

Japan

Hot rice is the only heat in it. The yolk thickens against the grain rather than setting, which is a sauce you can build anywhere there is something hot already in the bowl.

Squeeze the blanched leaf bone dry first. A ground-sesame dressing carries almost no liquid of its own, so any water left in the greens turns a coating into a puddle.
