Agave

Cactus syrup with a marketing department. Thin, mostly fructose, faintly of the tequila it never became.

12 pairings for Agave.

Tequila

classic

The same plant twice, one fermented and one not. Nothing else lines up so neatly.

Mezcal

common

Smoke needs sugar to stop reading as ash. Same agave, roasted harder.

Fructose front-loads on the tongue, so the capsaicin arrives entirely alone.

Yoghurt

common

It dissolves in cold dairy without grain, which sugar simply refuses to do.

Cinnamon

uncommon

Mexican pairing, not Californian. The syrup lets the bark do all the talking.

Tomatillo

uncommon

Green acid wants a sweetener with no caramel in it. This one has almost none.

Nopal

uncommon

Same desert, same faintly vegetal sweetness. Two halves of one landscape.

Cocoa

rare

Mole logic: the sweetener has to disappear entirely or the sauce reads as pudding.

Both green and resinous. Mexico has never sweetened this herb, and it should.
